Flat Bread Pizza

Dough:

2 cups of Flour

1 envelope of Yeast

a pinch of sugar

1 1/2 teaspoons of salt

2 teaspoons of olive oil

Mix flour, yeast, sugar and salt.  Slowly add 1 cup of lukewarm water mixed with olive oil.  Using a mixer or by hand knead until silky smooth. 

Put the ball of dough in an oiled bowl to rise until doubled in size. 

Cut the dough in half and roll thin with a rolling pin.  

Place on an oiled baking sheet and topp with vegetables of choice.  We used sauted epplant, fresh tomatoes, caramilized onion, peppers chopped fine and fresh oregano.  And beautiful cheeses-Fresh Mozzarella.  Young crottin-a soft ripened goat cheese that when young can crumble and has strong beautiful flavor.  Fresh goat milk ricotta...

Bake at 425-don't go lower-for 10-15 minutes.

YES!  This was the best pizza from my kitchen.  This dough makes a really nice thin crust pizza.  Roll Thin.
