Roasted Radicchio


Radicchio, Olive Oil, Salt, Balsamic


Preheat oven to 450°F. Rinse radicchio wedges in cold water; gently shake off excess water, but there is no need to dry completly. Place radicchio in large bowl, and drizzle with olive oil and sprinkle salt, and pepper; toss to coat.

Arrange radicchio wedges, on rimmed baking sheet. Roast until wilted. Turn over and roast until tender.

Arrange radicchio on platter, drizzle with balsamic vinegar, and serve. 


Other Suggestions:

Imagine the leaves wrapped around mozarella wedges and warmed or tossed with sundried tomatoes and ricotta in a pasta or used in a creamy rizotto.
